This vegetable dish has two parts: The black bean spread that is the "glue" holding the quesadilla together and the vegetables that load it up. You can easily use flour tortillas in place of the corn if you prefer. You can also use 8 larger tortillas to make 4 large quesadillas. The vegetables you use can vary and, in this way, this becomes a fun, hearty lunch or dinner where you can use up some odds and ends in the fridge. Just don't overdo the amount of vegetables, or it can become messy and the flavor can become murky. Two to three kinds of vegetables with the black bean mixture are perfect. Don't like spice? Omit the chili powder. Don't like cilantro? Simply omit!
